Ingredients
  • 1 whole Onion (diced)
  • 1 whole Bell Pepper (diced)
  • 4 cloves garlic (finely chopped)
  • 2 tsp Paprika
  • 1 tsp Cumin
  • 1/4 tsp Chili Powder
  • 6 whole Tomatoes (pureed)
  • 6 whole Eggs
  • Salt & Pepper (to taste)
  • fresh coriander (chopped)

Instructions
  1. In a large pan, heat olive oil on medium heat. Add chopped bell peppers and onion, and cook until the onions become translucent.
  2. Add garlic and spices and cook for a few minutes.
  3. Add the tomato puree to the pan, season with salt and pepper, and bring the sauce to a simmer.
  4. Use a spoon to create craters in the sauce and crack the eggs into the craters. Cover the pan and cook until the eggs are cooked to your liking. Garnish with chopped coriander and serve.
