Preeti and Sameer's Mom's Smoke Flavored Methi Chicken
Instructions
To marinate the chicken, put chicken in a container.
  1. Add turmeric powder, red chilli powder, coriander and cumin powder, garam masala, ginger garlic paste, salt. Leave for about 10-15 mins.
  2. In a kadai, add oil and let it heat. Once heated, add the cloves, pepper, cinnamon and star anise.
  3. Add chopped onions and sauté till they are translucent.
  4. Add handful of coriander and sauté.
  5. Add kasoori methi.
  6. Cover and let it cook for 1 min.
  7. Add marinated chicken and mix well.
DO NOT add water.
  1. Lower the flame and cover and cook for about 10 mins.
  2. Add 1 cup water and mix well. Cover, lower flame and cook for about 15-20 mins or until chicken has cooked.
TIP
  1. To thicken the curry, mix 2 tsp of wheat flour with 4tbsp cold water, mix to make a slurry. Add it to the curry and simmer.
For the smoked flavor:
  1. Use tongs to hold a piece of charcoal and flame it till it gets lit. (Be careful not to set it on fire)
  2. Separately, heat oil in a small kadai. Once the oil is hot and the charcoal is lit, place a small metal bowl in the center of the chicken curry.
  3. Place the lit charcoal piece in the bowl and pour hot oil over the charcoal. You will see fumes.
  4. Cover the kadai containing the chicken curry and let it rest for a few minutes so that the chicken curry can pick up the smoked flavor. Remove the bowl with the charcoal.
  5. Add coriander to garnish and enjoy the yummy chicken.
