Instructions
Pre-cooking instructions:
  1. Remove the pieces of Chicken Ghee Roast from the package and gently toss them in the marinade.
Handi Method:
  1. Ghee Roast is traditionally cooked in a handi or a Kadhai which is a special shaped vessel, that helps to cook the meat in its own juices till they are beautifully tender.
  2. Warm up the kadhai or the handi. Slide in the marinated chicken and stir to evenly sear the chicken on a medium flame.
  3. Once the chicken is lightly fried and the masalas give a cooked aroma, add half a cup of water, lower the heat, cover the vessel and keep cooking for upto 20 minutes.
  4. Check on the dish every 10 minutes, and gently stir to prevent the meat from sticking to the bottom. Give it a splash of water to moisten the meat and deglaze. You can keep cooking on a medium heat for the moisture to evaporate until you get the desired consistency.
Serving Suggestions:
  1. Serve with fresh neer dosas and a few cucumbers and sliced onions.
