Instructions
Handi Method:
  1. Andhra Chili Chicken is traditionally cooked in a handi or a kadhai which is a special shaped vessel that helps to cook the meat in its own juices till they are beautifully tender.
  2. Warm up the kadhai or the handi on fire and swirl a spoon of oil in it. Slide in the marinated chicken and stir to evenly sear the chicken on a medium flame.
  3. Once the chicken is lightly fried and the masalas give a cooked aroma, add half a cup of water, lower the heat, cover the vessel and keep cooking for up to 20 minutes.
  4. Check every 10 minutes, and gently stir to prevent the meat from sticking to the bottom. Give it a splash of water to moisten the meat and deglaze. You can keep cooking on a medium heat for the moisture to evaporate until you get the desired consistency.
On-the-hob Method:
  1. Place a non-stick frypan over a medium flame. Swirl a teaspoon of oil and let it warm up. Spread the pieces of meat around the pan, allowing the meat to sear on the bottom of the pan. When the side browns, turn it over and allow the other side to brown too.
  2. You could sprinkle water occasionally into the pan to retain the moisture, and put a lid on to capture the moistness of the meat in the pan. Towards the end of the cooking process, sprinkle some water and scrape the bottom of the pan to dissolve all the essences that have dried out in the bottom of the pan. It will reduce to a thick shiny liquid which is very flavorful and could be used to coat the pieces before serving.
Post Cooking method:
  1. Allow it to rest for 5 minutes before serving.

  1. Serve with steamed rice and pappu or with Andhra Chicken Biryani.
