Ingredients
  • 300 g prawns (without tail)
  • 2 lemons (juiced)
  • 1 inch piece of ginger (grated)
  • 4 - 6 cloves of Garlic (crushed)
  • ¼ cup yogurt
  • 2 tbsp Mustard Oil
  • 2 tsp Cumin Powder
  • 1 tsp kasuri methi
  • 1 tsp Chaat masala
  • Salt (to taste)

Instructions
  1. Marinate the prawns with ginger, garlic and salt. Set aside for 10 minutes.
  2. Mix all other ingredients with yogurt and make a paste. Add the prawns to the paste and mix well.
  3. Heat oil in a nonstick pan or a grill pan. Spread out the prawns around the pan, making sure you don’t crowd the pan too much.
  4. Cook on medium high heat, flipping occasionally until cooked, 7-10 minutes. Baste as required.
Ways to enjoy:
  1. Rest the cooked prawn pieces for 5 minutes.
  2. Garnish with fresh mint leaves and serve with your favourite dip.

Ingredients
  • 2 tbsp olive oil
  • cup sweet chilli sauce
  • cup Coriander leaves chopped
  • 1 tsp lime zest
  • 2 tbsp lime juice
  • 2 cloves garlic finely chopped
  • 1.2 kg medium prawns with tail on
  • Coriander leaves to serve
  • Aioli dip to serve
  • Lime wedges to serve

Instructions
  1. Combine oil, sweet chilli sauce, coriander, lime zest and juice, and garlic in a medium shallow dish. Season to taste. Add prawns and toss. Cover and refrigerate for 15 minutes.
  2. Preheat a greased barbecue plate on medium-high heat. Using tongs, remove prawns from marinade and grill on a grill pan, turning occasionally, for 2-3 minutes until pink and just cooked through.
Ways to enjoy:
  1. Rest them for a few minutes.
  2. Arrange prawns on a plate. Sprinkle with coriander leaves. Serve with aioli and lime wedges.

Ingredients

  • 3 Submarine buns
  • 4 tbsp Remoulade Sauce

Instructions
  1. Gently mix the contents of the package to ensure all pieces of meat are completely coated with batter.
  2. Place a deep-frying pan on medium heat. Add enough oil to completely submerge the pieces. Heat oil to 180℃. It shouldn't be so hot that the oil starts to smoke, nor too cool or the meat will just soak up all the oil. To test, slide a piece of meat in the oil and if it sizzles then you should be on the right track.
  3. Once the oil is hot enough, slide in the pieces one by one gently into the oil. Make sure you don’t drop the pieces in as it may make the oil splatter onto your hand. Gently stir the pieces in the oil and turn them over occasionally till you get a golden brown colour on all sides.
  4. Should take you approximately 3-4 minutes. If you feel like it isn't cooked through, fry for another minute. Remove carefully onto a paper towel with a slotted spoon.
  5. Cut open a submarine bun, layer it with remoulade, lettuce, tomato slices, and the fried prawn pakodas for a delicious Licious take on Po’ Boys.
